So, What’s On Your Christmas Menu?
A bunch of people will be here for Christmas. To give you some idea I’ll be peeling at least 18 pounds of potatoes for my sister to cook. With any luck, she’ll heed my whining and added roasted garlic to them when she mashes them.
On Christmas Eve we will have an assortment of munchies, including pepperoni, ring bologna, dry Italian salami (rolled in black pepper), Genoa salami, and some other type of sausage (I can’t think of the name) made with wine. To go along with all of this there will be several kinds of cheese: horseradish cheddar, smoked Gouda, fontinella, and Monteray jack with hot peppers. There will also be beer, mulled (i.e. spiced) wine, and port wine; along with non-alcoholic stuff like spiced apricot cider and apple cider.
For Christmas dinner we’re having roast turkey, baked ham (with a glaze made from the spiced wine), mashed potatoes, bread and sage dressing, cornbread and oyster dressing, peas, broccoli, baked butternut squash, and, of course, gravy.
I like to cook but being in a kitchen with women on a holiday is…well, let’s just say I’d rather stick a fork in my eye; so I’ll be making these deserts on Christmas Eve: fudge, oatmeal cookies, maple custard pie, pecan pie, and maybe one or two other types of cookies. Most of this will be given away to neighbors and friends.
